Easy & Quick Broccoli slaw salad

Broccoli Slaw SaladHave you been throwing away your broccoli stems? I’ve discovered that those stems can be useful in creating a yummy Broccoli Slaw Salad.

It is simple to make and is suitable for the Keto or Vegan lifestyle (make use of a vegan mayonnaise for the latter).

Broccoli stems (stalks) are just as nutritional as the florets.  This salad can then mask the broccoli from those picky eaters who hate this vegetable.

I make the Broccoli slaw salad on those evenings when I do not feel like cooking elaborate meals.  Because it includes one or 2 other crunchy vegetables, it is balanced enough to be the main dish. Just serve with your favorite protein for the side (e.g grilled chicken, pork, fish, etc).

Tips when making a broccoli slaw salad

The Broccoli slaw salad can be ready in a matter of minutes, and you can serve it immediately while at room temperature. You will get better palatability though if you let it chill overnight, or a couple of hours so as to let the ingredients to blend together.

You can also make the salad as a filling for your wraps, and sandwiches.  It will work very well too as the main ingredient in pasta salads.

Broccoli Slaw Salad

This super quick recipe is perfect for those nights you want a light and tasty side dish without pulling out another pot or pan. Just toss the ingredients into a large bowl and give it a quick stir to combine ~ and viola! You have a satisfying side dish or a crunchy filling for sandwiches or lettuce wraps.

ingredients:

  • 1 bag of broccoli slaw  OR make your own with:
  •  – Broccoli stalks (stems) from 2 heads of broccoli (grated)
  •  – 2 medium-sized carrots (grated)
  •  – 1/8 red cabbage (shredded)
  • 1/4 cup of chopped parsley (fresh)
  • 1 tsp apple cider vinegar
  • Salt and black pepper to taste

instructions:

  1. 1 Add broccoli slaw, avocado oil mayonnaise, cider vinegar, parsley, and celery seed to a glass bowl and combine. Season with salt and pepper to taste.
  1. 2 Serve immediately or place in the refrigerator for a couple of hours to chill, if desired. Enjoy!

NOTES:

1. You can play around with the seasonings to suit your tastes.
2. Any mayonnaise will work when making a Broccoli slaw salad.

Broccoli slaw salad with cranberries

Most people do love the broccoli slaw salad better with cranberries. There is nothing to it, really. Simply toss a handful or so of cranberries to your completed recipe (above) and enjoy!

Broccoli slaw pasta salad

Cook your preferred pasta according to the instructions on the package (a cup should be enough). Be careful not to overcook it, or else it will be one mushy mess when making the salad. Once your pasta cools down completely, mix it with the broccoli slaw salad (above) and serve.
