Crispy baked eggs – #MealPrep #Quickdinners

Eggs are not consumed much in my house, so we do have end up with a pile of them. The basic scrambled, boiled or fried egg routine can be monotonous too. I decided to try out a few quick dinner ideas around eggs (these crispy baked eggs being my first attempt). Let me put it out there that is scrumptious, and much filling than it looks (lol).

Serve it with roasted cherry tomatoes (or a side vegetable of your choice) and you have a balanced meal for your family dinner. Eggs are rich in nutrients, so what seems to be a light meal will go a long way.

Ingredients to make the crispy baked eggs

The recipe does not need many ingredients (no more than 4 main ingredients). I swear by this kind of cooking because I have a lot to balance on my plate (no pun intended):

  • Olive Oil
  • Salt and pepper
  • Butter
  • Onion
  • Breadcrumbs
  • Cheese (Gruyere or cheddar – I used Cheddar this time)

Other than the ingredients, a good ovenproof pan is sufficient to make these crispy baked eggs.

Crispy Baked Eggs

Crispy baked eggs with cheese and onions. Serve with roast tomatoes and you will have your quick dinner meal for the day.

ingredients:

  • 1 tbsp olive oil
  • Salt & pepper to taste
  • 1 small to medium sliced onion
  • 50g breadcrumbs (or cornflakes crumbs
  • 60g Cheddar Cheese
  • 4 eggs
  • 1 tbsp melted butter

instructions:

How to cook Crispy Baked Eggs

  1. Preheat the oven to 220°C/428°F
  2. Add the olive oil in an ovenproof pan or dish then the sliced onions and let them sautee in the oven until they are soft and golden brown.
  3. While the onions are browning in the oven, mix the breadcrumbs and cheese in a separate bowl, then sprinkle/scatter half of the mixture over the onion.
  4. Use a back of a spoon to make 4 holes on the mixture, and crack the eggs into each of the holes.  Season with salt & pepper.
  5. Stir the melted butter into the remaining crumbs and cheese mixture and sprinkle of the eggs.
  6. Bake until the eggs set, then serve with your favorite side dish.  I recommend roasted tomatoes.

If you want a lower calorie version of these crispy baked eggs, the quickest way is to use egg whites instead of whole eggs. The dish itself is higher in fat content, so please do take that into consideration when doing your meal planning.
