Easy instant pot recipes are not hard to come by, but it is also nice when you can find them consolidated in one page. Owning an instant pot is every parent’s paradise (this goes for anyone who lives a busy lifestyle). I plan to invest in one soon. I decided to round these up so that I can find them in one place when I need them. Feel free to pin, or bookmark the post also to make things easier for yourself.
You’d think by now we’ve all gotten used to this wonder of technology. One-pot meals save a lot of time and from stress, especially for those midweek dinners when everyone is tired from work and school.

One pot jambalaya

This recipe uses spicy sausages (sliced), but I am certain that any other meat-based protein source would work just fine (e.g chicken). I’m always looking to “vegan-ize” recipes due to my periodic Fasts from animal products. Simply substitute the sausages with chick-peas or any other legumes in order for the meal to be plant-based.

Mac ‘n cheese is a staple in most households with kids. It would be a crime if this delicacy did not make this list of easy instant pot recipes. I’m biased towards the recipe videos because it will be easier to tell whether a recipe is worth perusing further.
Instant pot chili
At last! something to create with ground beef (not counting the meatloaf).
Eggs are a wholesome source of protein. Owning an instant pot means that you are able to try this little gem even for other meals, other than breakfast. An instant pot egg frittata will not take more than 5 minutes to prepare and cook. I prefer the vegetables to retain their crunchy texture, but if that’s not your preference, simply steam the vegetables and cool them before making this recipe.
Instant pot minestrone soup
Soups are a hit in my home during our Lenten Fasts. This one is definitely a winner because it is vegan, and a full balanced meal at the same time. Its beauty is that you are not tied down to using the exact ingredients and beans – you can substitute with the kind that you have in your cupboard. If you are conscious about your carb intake, forgo the pasta and use cauliflower instead. the same would go for the beans, depending on the type of low carb lifestyle you follow.
I made this stew as a way to appease myself as I couldn’t eat meat on that day. It did not disappoint at all!
Pulled Pork Sandwich
Instant pots/slow cookers create the best pulled meat. Using a stove top is not as easy (and the meat may burn). Follow the recipe here on how to make instant pot pork pulled pork, then decided on the bread for your sandwiches.
