Baked Chicken And Rice

  1. Preheat your oven to 350°F and grease your ovenproof baking dish with 1 tablespoon of olive oil
  2. Heat the remaining oil in a frying and add the chick breasts (or thighs), season with salt and pepper and cook until golden brown
  3. Mix the brown rice and diced red onion in a baking dish, season with salt and pepper, pour chicken broth and stir. Arrange the chicken on top of the rice mixture
  4. Cover tightly with aluminum foil, for 40 minutes – then remove foil and further cook for 25 minutes or until rice is cooked.
  5. Once done, remove from oven and cool for about 5 minutes. Fluff the rice with a fork and serve.
