Spicy cauliflower “rice” with chickpeas

Cauliflower rice recipes have been done to death, and yet people do still search for them.  I thought I’d also share my quick and easy spicy cauliflower rice meal that I made over the weekend.  I’m currently eating a plant-based diet (temporarily), and at times like these, I tend to go heavy on flourspicy cauliflower rice and grains.  I intended to avoid just that, while also getting a filling and complete meal for the family and myself.

The recipe took less than 30 minutes to prepare, and I love that it is a one-pot meal.

I added the chick-peas because they are my go-to sources of protein when I cut out animal products. I’m certain that the meal will come out just as well if you sub with lentils, beans, or even frozen peas.  In fact, I have used frozen peas before.

You will notice that I’m not specific about the measurements for the oil, and the curry spices.  These depend on your preferences. The oil must still enough to prevent the food from sticking on the pan while cooking.  A cooking spray can work too, but I find that using oil adds flavor too.

Some people prefer their spicy foods to be mildly so, while some will go all the way and make this spicy cauliflower rice really hot.

Personally, my attraction to using the curry spices is the aroma and the fact that they do not carry the sugar baggage that some spices carry.

Spicy Cauliflower Rice

Fried spicy cauliflower rice that serves well as a rice alternative for those who want to eat plant-based, while also being carb conscious.

Ingredients:

  • Florets (only) from 1 large cauliflower head (alternatively buy ready-made cauli-rice)
  • Broccoli stems (from 1 broccoli)
  • 2 large carrots (peeled)
  • 1/2 medium onion (yellow – chopped)
  • 1 tin of chickpeas (or pre-cooked)
  • Curry powder
  • Salt and pepper to taste
  • Vegetable seasoning
  • Cooking oil (for frying)

Instructions:

  1. 1 Heat oil on low (stove top) and add onion to saute
  1. 2 Grate all vegetables (cauliflower, broccoli stem, and carrots) and add to the oil
  1. 3 Season and spice with vegetable seasonings, curry powder, salt, and pepper to taste.
  1. 4 Add chickpeas, cover with a lid, and stir occasionally.
  1. 5 Once the chickpeas are cooked to your satisfaction, remove from heat and serve either as a side dish or a main meal.

NOTES:

1. The amount of curry powder should depend on your preferences.
2. You may forego the chickpeas if this is meant only to be a side dish.

If you have picky eaters, this cauli-rice would be one way to get them to down their veggies. It worked for me. In fact, because cauiflower is so versatile, I suspect that some kids do not even ealize that it is a vegetable (lol).
